This is a great tasting, healthy bruschetta, that is both cheap, and incredibly quick to make. With our recommended ingredient quantities, it will comfortably feed 2 people as a starter, or one person as a main.
Here is the list of ingredients you will need:
- 4x Tomatoes
- 6x Slices of Ciabatta (or wholemeal alternative)
- 6x Fresh Basil leaves
- 1x Garlic Clove
- Olive Oil (preferably Extra Virgin)
- Black pepper
Step by step recipe:
First of all you will need to chop your tomatoes and red onions. Heat your grill up whilst chopping these.
Once these are chopped, prepare your bread. If you’d like to make your bruschetta as healthy as possible, use a wholemeal (brown) bread. (It will still taste great, we promise).
Place on a tray under the grill until golden and slight crispy on top.
Once you have taken them out from under the grill quickly take a sharp knife and cut 3 or 4 small slashes across the top of the bread. Then rub generously with your garlic clove, and drizzle half a tablespoon of olive oil over the top.
Then top with chopped tomatoes and onion, season with blackpepper and serve!
Well that’s interesting. I always thought it was the other way around too! I guess I’ve been craving tomato salsa haha. I love it with lots of basil. Love that yours has cheese on top, I’ve never done that before.

DeleteI actually learned this the hard way in Italy; I was shocked when I received toast that I thought would be bruschetta… I suppose it was my silly American ways to expect some friggin tomatoes on top.
